Rocky Road


I found this amazing recipe when I was having a flick through my favourite ever cookbook ('What To Bake and How To Bake It by Jane Hornby) and when I saw this I knew I just had to make it! My Step-Mum actually used to make this when I was younger and I fell in LOVE with it - I mean look at them! (*all the heart eye emojis!*) This one is super easy because you don't actually have to bake it! And as you can see, it is not on the healthy side of the baking spectrum.. but we all deserve a treat every now and again!! I always tend to do quite chocolate-y bakes after Easter since there are always chocolate eggs lying around! I definitely have a lot this year, since my family decided to buy eggs for everyone this year (I ended up with quite a few!!) So this bake is for all of you who still have  the will power not to eat loads of Easter eggs and don't know what to do with all the leftovers...go on you deserve a treat! haha!

YOU NEED: 
• 55g butter 
• 400g dark chocolate 
• 2 tbsp golden syrup
• A pinch of salt
• 100g Marshmallows
• 175g Crunchy biscuits (whichever kind you like)
• 1 tbsp icing sugar

(Optional 'Yucky' Extras) :
• 125g mixed nuts
• 85g dried fruits




METHOD: 
1. Use some butter to grease a brownie pan (/square tin) then line it with baking parchment.
2.Then, melt the chocolate over a pan of boiling water (bain- marie), add the butter and mix.
3. Then stir in the syrup and salt and stir together - then take the mix off the heat.
4. Then, chop up all your extra ingredients into small chunks. Crush and break the biscuits into small chunks (but not too small - not like a cheesecake base!! I made this mistake!) and snip any large marshmallows in half.
5. Scoop around 8 tablespoons of the chocolate out of the mix and set this aside. Throw everything (marshmallows, biscuits, nuts, fruits) into the mix and stir together to make sure everything is combined.
6. Spread the mixture into your square tin and add the leftover chocolate on top. (don't worry about it being perfectly smooth!)
7. Let the rocky road chill in the fridge for 3 hours (or even longer if you like) until its firm. Remove it from the tin and peel off the paper. Then cut the rocky road into squares and dust with icing sugar to present.
