Fresh Strawberry Eton Mess


I'd love to be able to say that summer is well and truly upon us now but as I'm writing this it is well and truly pouring it down outside and I'm snuggled up under a blanket! I don't want to admit it but I think our summer has been and gone here in the UK and we've had our week of nice weather, haha! But still, that won't stop me from feeling super summer-y and enjoying all the delicious summer treats that I love! Eton mess is definitely up there as one of my favourite desserts, but in the summer it reaches a whole new level of delicious - especially when you use juicy fresh strawberries and it works well for me because the promise of a delicious desert is the only way to get Ethan to go strawberry picking with me!  So, not only is Eton mess super delicious and refreshing for a summer's day, its ridiculously easy to make - I know you probably don't need a recipe to follow but I've decided to write this post anyway, just in case. Also, as I've never had any luck with meringues I've opted for the easier pre-made option.. but you can 100% make your own, if you're feeling brave! YOU NEED: 
• A punnet of fresh strawberries
6 pre-made meringues
• 200ml whipping cream
• 1 tablespoon sugar




METHOD: 
1. Whip the cream and sugar together in a mixing bowl until completely combined and soft peaks form, making sure not to over-whip.
2. Clean the strawberries well and chop them into quarters. (Leave a few for decorating!)
3. Mix half of your strawberries into the cream, stir well and don't worry if some of the strawberries turn to puree - it'll taste better!
4. Crumble 5 of your meringues into the mixture, don't crumble them too much but you also don't want huge pieces!
5. Take the rest of your strawberries and combine them carefully into the mixture.
6. Spoon the mixture either into a clear glass bowl or into individual glasses or bowls (mason jars look gorgeous.. get creative!)
7. Once your bowl/glass is full, crumble the last meringue into small pieces on top and add a whole strawberry for decoration!
